Flavorful, hearty chili
Easy, delicious, and PERFECT for meal prepping! This chili recipe will keep you coming back for more! Enough of me talking, let’s get cooking! Here is what you’ll need:
1/2 yellow onion
1 can pinto beans
2 garlic cloves
1 can tomato sauce
1 can diced tomatoes
1 lbs ground “turkey” (Use the beef-less ground by Gardein)
2 tbsp chopped parsley
1 1/2 tbsp ancho chili powder
1/2 tsp cumin
1/2 tsp oregano
1/2 tsp cayenne pepper
1/4 tsp chipotle chili pepper
1 can frozen corn
Vegan cream cheese
Chop up onions into dices
Break apart the beef-less grounds
Season with salt, pepper, garlic powder, onion powder, oregano.
In a sauce pan heat olive oil an cook meat-less ground and onions until the onions are translucent. Place in crockpot.
Combine all remaining spices, blend together in crockpot. Feel free to play with the ratios if you want more of a particular flavor.
Add beans, and tomato products.
Stir everything together and set on high to cook for 4 hours (or 6 hours on low.)
Top with shredded cheese and sour cream!
